Ingredients:
- 2 cups (300g) Granny Smith apples, peeled and finely diced
- 3 tbsp (42g) unsalted butter
- 1/4 cup (50g) light brown sugar
- 1 tsp (2g) ground cinnamon
- 1 tbsp (15ml) lemon juice
- 2 cups (480ml) heavy cream
- 1 cup (240ml) whole milk
- 3/4 cup (150g) granulated sugar
- 5 large egg yolks
- 1 tsp (5ml) vanilla extract
- 1/2 tsp (1g) ground cinnamon
- 1/4 tsp (0.5g) ground nutmeg
- 1/4 tsp (1.5g) salt
- 1/2 cup (60g) graham cracker crumbs
- 2 tbsp (28g) melted unsalted butter
- 1 tbsp (12g) brown sugar
Instructions:
- Melt 3 tbsp butter in a pan over medium heat. Add diced apples and lemon juice. Cook for 5-7 minutes until the apples are tender and starting to brown.
- Stir in brown sugar and cinnamon. Simmer for another 3 minutes until the mixture is mahogany-colored and syrupy. Remove from heat and chill completely.
- Toss graham cracker crumbs with melted butter and brown sugar. Toast in a skillet over medium heat for 3 minutes until fragrant. Let cool.
- In a saucepan, simmer heavy cream, milk, cinnamon, nutmeg, and salt over medium heat until small bubbles form around the edges. Do not let it boil.
- Whisk egg yolks and granulated sugar in a bowl until pale and thick.
- Slowly drizzle one cup of the hot cream into the egg mixture, whisking constantly to prevent scrambling.
- Pour the egg mixture back into the saucepan. Cook over low heat, stirring constantly, until the custard thickens.
- Strain the custard through a fine-mesh strainer, stir in vanilla extract, and chill for 6 hours.
- Churn the chilled custard in an ice cream maker. Fold in the chilled caramelized apples and toasted graham cracker crust before freezing until firm.
