Ingredients:

  • 3 medium Granny Smith apples, peeled and diced (approx. 1.5 lbs / 680g)
  • 1 tbsp lemon juice
  • 1 tbsp unsalted butter
  • 2 tbsp pure maple syrup
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 tbsp water

Instructions:

  1. Peel, core, and dice the apples into 1/4 inch cubes. Toss them immediately with the 1 tbsp lemon juice in a bowl to keep them bright.
  2. Melt 1 tbsp unsalted butter in a large non stick skillet over medium heat.
  3. Add the diced apples to the pan. Stir for 3-5 minutes until the edges become slightly translucent and a faint golden hue appears.
  4. Stir in 2 tbsp pure maple syrup, 1 tsp ground cinnamon, 1/4 tsp ground nutmeg, and 2 tbsp water.
  5. Reduce the heat to medium low immediately. Note: This prevents the maple syrup from scorching.
  6. Simmer for another 5 minutes, stirring occasionally.
  7. Watch the liquid until it thickens into a syrupy consistency that clings to the fruit.
  8. Remove from heat once the apples are tender but still hold their shape and the sauce is a deep, glossy mahogany.
