Ingredients:

  • 1 cup (90g) rolled oats
  • 1/2 cup (125g) creamy peanut butter
  • 1/4 cup (60ml) pure maple syrup
  • 2 tbsp (15g) chia seeds
  • 1/2 cup (70g) Granny Smith apple, finely minced
  • 1 tsp (2g) ground cinnamon
  • 1/2 tsp (1g) vanilla extract
  • 1 tsp (5ml) lemon juice
  • 1/4 cup (30g) vanilla protein powder
  • 1 pinch (1g) sea salt

Instructions:

  1. Mince the apple into tiny, uniform pieces (about the size of a grain of rice) and toss with the lemon juice in a small bowl to prevent oxidation.
  2. In a large mixing bowl, combine the peanut butter, maple syrup, and vanilla extract, stirring until the mixture is velvety and smooth.
  3. Fold in the cinnamon, protein powder, and sea salt until no clumps remain.
  4. Stir in the rolled oats and chia seeds, then fold in the minced apples until the dough is homogenous and holds together.
  5. Scoop about 1 tablespoon of dough per ball and roll tightly between your palms to form a smooth sphere.
  6. Place the balls on a parchment-lined baking sheet and chill in the refrigerator for 30 minutes to set the structure.
