Ingredients:

  • 1 medium apple, diced into 1/2-inch cubes
  • 1 tbsp unsalted butter
  • 1/2 tsp ground cinnamon
  • 1 tsp maple syrup
  • 1 cup plain Greek yogurt
  • 1/2 tsp vanilla extract
  • 1 tsp maple syrup
  • 1/4 cup cinnamon granola
  • 1 tbsp chopped walnuts
  • 1 pinch ground cinnamon

Instructions:

  1. Heat the butter in a small non-stick skillet over medium heat.
  2. Add the diced apples and ground cinnamon to the skillet. Sauté for 5–8 minutes, stirring occasionally, until tender and golden-brown.
  3. Stir in 1 tsp of maple syrup during the last 60 seconds of cooking to create a glossy coating.
  4. In a mixing bowl, stir the vanilla extract and optional maple syrup into the Greek yogurt until smooth.
  5. Spoon the yogurt into a serving bowl and smooth the top.
  6. Pile the warm, cinnamon-glazed apples in the center of the yogurt.
  7. Sprinkle the cinnamon granola and chopped walnuts over the top and finish with a light dusting of cinnamon.
