Ingredients:
- 1 lb salmon fillet, skin removed, cut into 1-inch cubes
- 1 tbsp cornstarch
- 1 tbsp olive oil
- 1 tsp garlic powder
- 0.5 tsp smoked paprika
- 0.5 tsp kosher salt
- 0.25 tsp black pepper
- 3 tbsp unsalted butter, melted
- 3 cloves fresh garlic, minced
- 1 tbsp fresh lemon juice
- 1 tbsp fresh parsley, finely chopped
Instructions:
- Pat the salmon cubes bone-dry with paper towels. In a large bowl, toss the cubes with olive oil, then sprinkle the cornstarch, garlic powder, smoked paprika, salt, and pepper over them. Shake until each piece is evenly coated.
- Preheat your air fryer to 400°F (200°C). Arrange the salmon bites in a single layer in the basket, ensuring they are not touching. Air fry for 8 minutes, shaking the basket at the 4-minute mark.
- While the salmon cooks, whisk together the melted butter, minced garlic, lemon juice, and parsley. Immediately transfer the cooked salmon to a clean bowl, pour the garlic butter over them, and toss gently to coat.
